Albert Bichot owns approximately 107 hectares vineyards, spread from north to south of Burgundy:
Long-Depaquit, Chablis - A 65-hectare gem, including the monopole "La Moutonne". Mineral and crystalline wines.
Clos Frantin, Côte de Nuits Based in Vosne-Romanée. Specializing in Grands Crus (Chambertin, Richebourg).
Domaine of the PavilionCôte de Beaune. Based in Pommard. Produces Corton-Charlemagne and Meursault wines of great finesse.
Domaine Adélie, Mercurey, 7 ha in Côte Chalonnaise, named in homage to the daughter of Albéric Bichot.
Domaine of Rochegrès, Moulin-à-Vent - 5 ha in Beaujolais, on pink granite soils rich in manganese.

Commitment and Viticulture
Under the impetus ofAlbéric Bichot, THE domaine has made a major shift towards sustainable agriculture:

Organic Certification: Almost all of the vineyards in Côte de Nuits, Côte de Beaune and Côte Chalonnaise is certified Organic Farming.

Yield Control: Use of bud thinning and green harvesting to concentrate quality.

Floors: Abandonment of herbicides and return to tilling to promote microbial life and deep rooting.
The Style of Bichot Wines
Despite the diversity of the terroirs, a guiding principle ("the Bichot touch") is emerging:

Elegance before power: The extractions are gentle. The aim is to achieve the silky texture of the tannins rather than harshness.

Subtle Breeding: New wood is used sparingly (rarely more than 30% in the villages) so as not to mask the purity of the fruit.

Typicality: A Chablis from Domaine Long-Depaquit must taste the "pebble", while a Vosne-Romanée of Clos Frantin must express the violet and the spice.
