    Vinification and aging

    Winemaking at Château Ausone is crafted with the utmost care, respecting tradition. The grapes are harvested by hand and meticulously sorted. Fermentation takes place in wooden vats, with precise temperature control. The wine is then aged in French oak barrels for 20 to 24 months, allowing it to develop its complexity and finesse.
