The grapes, harvested by hand, are carefully sorted before being vinified in temperature-controlled stainless steel tanks, allowing for precise temperature control. Aging takes place in oak barrels, a large proportion of which are new, for approximately 18 months. This gives the wines their structure, complexity, and aging potential.
