Vinification and aging

The previous winter had been sufficiently rainy and cold.
Throughout the harvest period, the weather conditions remained favorable, with relatively warm days, without significant heat waves and cool nights.

Fermentation in open concrete vats at 29°C.
The floating skins were manually punched down every 2 hours during fermentation.
The juice was racked after 5 days. After malolactic fermentation, the wine was aged for 24 months in new 225-litre Nevers French oak barrels.
