    Owner and history

    The Les Granits vineyard rests on very poor, stony granite soils. These difficult conditions force the vines to delve deep to find nutrients, giving the wine a unique minerality and complexity.

    Vinification and aging

    The winemaking process begins with complete destemming, followed by slow fermentation in small concrete vats. The extended maceration, exceeding one month, allows for a gentle and harmonious extraction of tannins. Only the free-run wine, a guarantee of finesse and quality, is used for this single-vineyard selection. Aging takes place in oak barrels (new and one- to two-year-old) for 16 to 18 months, imparting subtle aromas while respecting the fruit.
