THECanon CastleIt owes its name to the great privateer Jacques Kanon, who purchased the property in the 18th century. From 1760 onwards, he dedicated the entire estate to viticulture. Over the following centuries, the estate changed hands several times. Passing from Raymond Fontemoing to the Fournier family, the property is now owned by Chanel. Château Canon has benefited from significant investment at a time when the estate was struggling.

Thus, the vineyard was completely restructured, with more than half of it uprooted and then replanted after several fallow seasons. The winery was also rearranged and the cellars restructured, including a new barrel cellar capable of housing up to900 barrelsarranged in 3 climate-controlled spaces. Two cellars receive the wine in the first year, and the third in the second year. At the same time, the neighboring vineyard of Château Curé-Bon was acquired, and 3 of its 5 hectares in good condition were incorporated into Canon, thus facilitating its restructuring. Under the watchful eye ofoenologist Gilles PauquetThe winemaking process is carried out using traditional methods. Maceration takes place over three weeks in temperature-controlled stainless steel tanks, and aging occurs in mostly new oak barrels. Thanks to these significant efforts, Château Canon has regained its quality and prestige.

Spanning 34 hectares, the vineyards are composed of 80% Merlot and 20% Cabernet Franc. The oceanic climate and the predominantly clay-limestone soil benefit the grapes, which are cultivated according to the principles of sustainable viticulture. Long under the direction of John Kolasa, it has been managed since 2014 by the talentedNicolas Audebertwho runs Château Canon. The estate produces red wines, including a flagship wine calledCanon Castleand a second wine calledClos CanonIt has been included in the official classification of the wines ofSaint-ÉmilionClassified as Premier Grand Cru Classé B in 2012. The velvety style, elegance and refined tannins that characterize the wine are further accompanied by a aging potential of up to 50 years.
