Vinification and aging

Winemaking at Château Cantemerle is a meticulous process that begins with the hand-harvesting of the grapes, ensuring a rigorous selection of the finest berries. After delicate destemming, the grapes are fermented in temperature-controlled stainless steel tanks, allowing for precise temperature management. Aging takes place in oak barrels, some of which are new, to impart complexity and roundness to the wine. This aging process, which lasts approximately 12 to 18 months, helps develop aromas and refine tannins, resulting in a wine ready to be enjoyed in its youth while also possessing remarkable aging potential.
