Vinification and aging

The winemaking process Clos The 2024 vintage of L'Evêque is crafted with meticulous care. The grapes are harvested by hand and then sorted to retain only the finest bunches. After delicate destemming, fermentation takes place in stainless steel tanks to preserve the purity of the aromas. Aging in oak barrels, some of which are new, adds a touch of elegance and complexity to the wine. This process, combined with rigorous temperature control, guarantees precise vinification that respects the characteristics of the terroir.
