    Tasting notes

    This exceptional vintage pairs perfectly with exquisite dishes such as lobster tail, scallops in a casserole, Bresse chicken in a cream sauce, or turbot with orange. Serve it chilled, around 10°C, opening the bottle at least an hour before tasting.

    Owner and history

    The Château d'Yquem vineyard covers 113 hectares, of which approximately 100 are in production. Sémillon (75%) and Sauvignon Blanc (25%) thrive in a microclimate ideal for the development of botrytis. The vineyard's size allows the vines to grow in a wide variety of soils, resulting in a wine with remarkable complexity. Botrytis cinerea infects the berry and allows water to evaporate. The sugar then concentrates within the grape. The harvest is carried out in several stages by 200 pickers in order to harvest the grapes at perfect ripeness and thus obtain a perfect balance. On average, 5 to 6 sortings are required over a period that can extend from October to December.

    Vinification and aging

    Fermentation takes place in new oak barrels. Each day's harvest is aged separately (6 to 8 months) and then pre-blended in the spring. Only the highest quality barrels are kept. The blend is then aged for 20 months in oak barrels. Bottling takes place during the third winter.
