Description

In the heart of Provence, on the foothills of the Massif des Maures, Clos Peyrassol embodies a rare expression of the Côtes-de-Provence terroir. This exceptional vineyard, enclosed by dry stone walls, stretches out at the foot of ancient Templar buildings and gives rise to one of the most prestigious wines of the Peyrassol estate. Cultivated organically, this vineyard benefits from a unique Triassic terroir, ideal for crafting refined wines. Since 2009, the Clos Peyrassol Rosé has been produced only in exceptional vintages, illustrating the estate's pursuit of excellence and authenticity.

Notes and pairings

Tasting notes

The Clos Peyrassol Rosé 2024, an extremely pale pink, reveals remarkable finesse. The nose opens with delicate aromas of cherry blossom, fresh citrus, and white fruits such as peach and pear. On the palate, the wine is generous, built around a chiseled freshness and pleasant bitterness. Its remarkable length, supported by an elegant salinity, marks a complex, balanced, and typically Mediterranean cuvée.

Food & wine pairings

This gastronomic rosé will enhance a ceviche, citrus-flavored poultry or a salmon tartare.

Producer

Originating from a Triassic clay-limestone sinkhole, Clos Peyrassol is one of the estate's finest parcels, enclosed by dry stone walls. The soil, rich in pebbles, offers natural drainage and fosters the delicate expression of Provençal grape varieties. Cultivated organically, the vines benefit from virtuous practices: spontaneous ground cover, sowing of cereals between the rows, and harvesting at dawn. This meticulous care allows for optimal ripening, preserving freshness and aromatic expression. The 2024 vintage fully reflects this harmony between climate, terroir, and expertise.

Owner and history

Since 2001, Domaine Peyrassol has been managed by Philippe Austruy, a patron of the arts and discerning wine enthusiast, passionate about great terroirs. His ambition to reveal the unique potential of Clos Peyrassol has resulted in in-depth work in the vineyards and the cellar. Through organic conversion, parcel restructuring, and targeted investments, he has enhanced the estate's Templar heritage. Surrounded by a team of dedicated winemakers, he now produces exceptional wines, such as this 2024 rosé, which embodies the precision, elegance, and modernity of Provence winemaking.

Vinification and aging

The vinification of Clos Peyrassol Rosé respects the identity of each grape variety. The grapes, harvested at sunrise, are gently pressed using pneumatic presses, with rigorous separation of the juices.
Fermentation takes place in stainless steel tanks and stoneware jars at controlled temperatures, promoting aromatic precision. After fermentation, the juice is gently racked to retain only the finest lees. Partial aging in jars allows for a natural evolution of aromas and balance on the palate, giving the wine a silky texture and remarkable complexity.
