Vinification and aging

Winemaking at Domaine Comte Senard is made according to Burgundian traditions. After hand-harvesting, the grapes are destemmed before being placed in vats for a gentle fermentation, which promotes the extraction of aromas. Aging in oak barrels, some of which are new, lasts approximately 12 to 18 months, allowing the wine to refine and develop its complexity.
