Vinification and aging

Winemaking at Domaine David Duband It is a meticulous process that respects Burgundian traditions while incorporating modern techniques. After careful hand-harvesting, the grapes are destemmed before being vinified in temperature-controlled tanks. Fermentation proceeds slowly, allowing for gentle extraction of tannins. Aging, carried out in oak barrels, some of which are new, lasts approximately 12 to 18 months, bringing complexity and harmony to the wine.
