Vinification and aging

Winemaking at Domaine Dujardin is crafted with meticulous care, respecting Burgundian traditions. The grapes are hand-harvested, rigorously sorted, and then partially or fully destemmed depending on the vintage. Fermentation takes place in stainless steel tanks or oak barrels, using indigenous yeasts to preserve the authenticity of the aromas. Aging occurs in French oak barrels, a proportion of which are new, for a period that varies depending on the vintage, to impart complexity and elegance to the wines.
