    Vinification and aging

Winemaking at Domaine Ott is a meticulous process, blending tradition and innovation. The grapes are harvested by hand, then carefully sorted to retain only the finest. After a brief maceration, the pressing is carried out delicately to extract the best aromas. Fermentation takes place in stainless steel tanks, allowing for perfect temperature control. Finally, the wines are aged on their fine lees, adding complexity and roundness, before bottling. Each step is designed to respect the wine's identity and its terroir.
