    Vinification and aging

    The vinification of Les Chandelières 2019 is carried out with meticulous care. After hand-harvesting the grapes, they are destemmed and gently crushed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, preserving the fruity aromas of the Sauvignon Blanc. Aging on fine lees for a few months adds complexity and texture to the wine. This painstaking process, combined with proven expertise, results in a Menetou-Salon that is both fresh and elegant.
