    We enjoy this wine with hare in mustard sauce, oven-roasted quail stuffed with mushrooms, or veal fillet with chanterelles and thyme. Serve the wine at around 14°C.

    Owner and history

    This Gevrey-Chambertin is a blend of old-vine Pinot Noir from three plots totaling approximately four hectares. The vines are located around the village of Gevrey and are 50 years old! The vineyard is cultivated biodynamically.

    Vinification and aging

    Gentle winemaking after destemming (minimal intervention to allow the grapes to express themselves)
    The wine is aged in oak barrels with little new oak in order to preserve its finesse.
