The vineyard of Domaine William Fèvre extends across the best terroirs of Chablis, notably the famous Premier Cru And Grand Cru. The vines are planted in clay-limestone soils rich in marine fossils, evidence of a fascinating geological history. climat The continental climate of the region, with its hot summers and cold winters, allows the grapes to ripen slowly, thus developing a beautiful acidity. This appellation covers 11.44 hectares located on the heights of the Côte des Grands Crus. Its name likely derives from a corruption of the word "perreuse" (stone), the name given to the ancient Roman road whose route passed at the foot of the present-day terroir. The wines are long and elegant. Soil composed of dense, compact clay resting on a limestone slab, making it a Grand Cru endowed with exceptional aging potential. Plots of 2.55 hectares, or 22% of the total appellation, facing southwest for the northernmost plots and south/southeast for the others.

Vinification and aging

Winemaking at Domaine William Fèvre The winemaking process is carefully orchestrated to preserve the integrity of the fruit.
