    Vinification and aging

    Winemaking at La Mondotte is a meticulous process. The hand-harvested grapes are rigorously sorted to select only the very best. Fermentation takes place in temperature-controlled stainless steel tanks, allowing for precise temperature management. Aging then occurs in oak barrels, some of which are new, for 18 months. This careful winemaking process refines the aromas and gives the wine a beautiful structure, while preserving the pure expression of the terroir.
