    The estate is currently managed by the de Boüard de Laforest family, who have preserved its heritage while infusing La Mondotte with a modern vision. This family, involved in winemaking for generations, aims to produce exceptional, environmentally conscious wines. Their commitment to biodynamic practices and grape quality reflects a deep respect for the land and the art of winemaking.

    Vinification and aging

    The vinification of La Mondotte 2020 is carried out with meticulous care, respecting traditions while incorporating modern techniques. The grapes are harvested by hand, ensuring the selection of only the finest. Fermentation takes place in temperature-controlled tanks, allowing for a gentle extraction of tannins. Aging in oak barrels lasts 18 months, 80% of which are new, imparting complexity and structure to the wine. This painstaking process allows the full aromatic richness of the terroir to be revealed.
