    Vinification and aging

    The vinification of La Mondotte 2020 is carried out with meticulous care, respecting traditions while incorporating modern techniques. The grapes are harvested by hand, ensuring the selection of only the finest. Fermentation takes place in temperature-controlled tanks, allowing for a gentle extraction of tannins.
