    Notes and pairings

    Tasting notes

This Hermitage white wine is the perfect accompaniment to refined dishes such as roasted langoustines, poultry in a cream sauce, or aged cheeses like Comté. Serve it slightly chilled, at a temperature of 12°C, to fully appreciate its complexity and balance.

    Food & wine pairings

    Owner and history

The grapes used to make the "De l'Orée" Single-Site Selection come from the Murets plot. The soil is composed of very old fluvio-glacial alluvium. Organic and Biodynamic.

    Vinification and aging

After pressing, the must is cold-settled for approximately 24 hours. About 50% is vinified in demi-muids with regular lees stirring, the remainder in tanks. The wine is aged on its lees with regular stirring for 6 months. Before bottling, the barrel aging process is monitored through frequent tastings. Aging lasts from 10 to 12 months.
