    Its color is a brilliant pale yellow. On the nose, it reveals aromas of exotic fruits, citrus, and delicate floral notes. On the palate, the attack is lively and fresh, with a lovely acidity that balances the fruitiness. The finish is long and persistent, marked by a pleasant minerality. A harmonious and elegant white wine, perfect for sunny days.

    Castello della Sala is located in Umbria, not far from the Tuscan border, about 18 kilometers from the historic city of Orvieto. domaine of this château The medieval estate covers 600 hectares, of which 229 hectares are planted with vines. These vines flourish on the rolling hillsides that characterize the magnificent surrounding countryside, at an altitude varying between 220 and 470 meters. Castello della Sala offers an ideal terroir for growing white grape varieties. The vines thrive in clay-limestone soils rich in fossilized seashells and benefit from excellent exposure to the rising sun, as well as optimal temperature variations between day and night. Only Pinot Noir, a red grape variety, is an exception: it is the only one to have found ideal growing conditions in this region to fully express its potential.

    Owner and history

    The family Antinori is at the head of this domaine iconic. Their winemaking heritage dates back over 600 years, and their passion for wine is passed down from generation to generation. Antinori are recognized for their commitment to quality and their ability to innovate while respecting traditions. The vineyards selected for the production of Conte della Vipera are located between 250 and 350 meters above sea level, on soils rich in marine fossils. This wine takes its name from the first owners of Castello della Sala, and its label depicts the 13th-century Chapel of Saint John (Cappella da San Giovanni), located on the domaine. The first vintage of Conte della Vipera was 1997.

    Vinification and aging

    The grape bunches were hand-harvested and immediately transported to the winery where they were chilled before pressing to preserve their characteristic varietal aromas. The grapes were gently pressed, and both musts were kept at a constant temperature of 10°C for several hours to encourage natural clarification. They were then transferred to stainless steel tanks where alcoholic fermentation took place at a temperature not exceeding 16°C. Once this phase was complete, the wine was kept at a controlled temperature of 10°C to prevent malolactic fermentation and perfectly preserve its organoleptic qualities. The fresh, vertical, and subtly aromatic Sauvignon Blanc was blended with the supple and tropical Sémillon, each grape variety complementing the other.
