    Vinification and aging

    Winemaking at Château Certan de May is a meticulous process, blending tradition and modernity. After a manual harvest, the grapes are carefully sorted before being destemmed. Fermentation takes place in temperature-controlled stainless steel tanks, allowing for precise temperature control and gentle tannin extraction. Aging occurs in oak barrels, some of which are new, for 12 to 18 months, depending on the vintage. This period allows the wine to refine itself, while delicately integrating the oak aromas.
