Vinification and aging

At Château In Pédesclaux, winemaking is a meticulous art that begins with the hand-harvesting of fully ripe grapes. Once selected, the grapes are destemmed and crushed before being placed in vats for controlled fermentation. Long maceration periods allow for the extraction of color and aromas while preserving the finesse of the tannins. Aging takes place in oak barrels, some of which are renewed each year, imparting a subtle touch of vanilla and spice to the wine.
