    Vinification and aging

    The winemaking process Clos The 2017 Tart is a meticulous winemaking process, respecting Burgundian tradition. After hand-harvesting the grapes, they are carefully destemmed before being placed in vats. Fermentation takes place at a controlled temperature, allowing for the extraction of the delicate aromas of Pinot Noir. The wine is then aged in oak barrels, some of which are new, to enrich it while preserving its character. This process lasts approximately 16 to 18 months, during which the wine develops its complexity and structure.
