Vinification and aging

The Cloudy Bay Pinot Noir is crafted with meticulous precision to preserve the purity and elegance of the fruit. The grapes are hand-harvested and carefully sorted, then destemmed and gently crushed. Fermentation takes place in stainless steel tanks, with a gentle maceration to extract aromas and tannins. The wine is then aged in French oak barrels, a proportion of which are new, for an undisclosed period, allowing its structure to refine and its aromatic complexity to develop. After aging, the wine is bottled and further matured in the cellar before release.
