They are dedicated to respecting the environment and promoting sustainable viticulture, while ensuring that each bottle reflects the authenticity and richness of the New Zealand terroir.

    Vinification and aging

    The Cloudy Bay Sauvignon Blanc is crafted with meticulous care. The grapes are hand-harvested and then gently pressed to preserve their aromas. Fermentation, carried out in stainless steel tanks, maintains the freshness and vibrancy of the varietal. Part of the wine is fermented in oak barrels to add complexity and texture, while the other part is vinified in tanks to retain its fruity expression. Aging on the lees, which lasts several months, contributes to the wine's roundness and richness, before a final, expertly orchestrated blend.
