    Vinification and aging

    Winemaking at Domaine Arnoux-Lachaux is a meticulous process, respecting tradition while incorporating modern techniques. The hand-harvested grapes are destemmed and then gently crushed. Fermentation takes place in stainless steel tanks, allowing for precise temperature control. Gentle punch-downs are performed to gently extract the tannins. Aging occurs in oak barrels, some of which are new, for 12 to 16 months, adding complexity and structure without masking the fruit. This attention to detail allows the typicity of the terroir to be revealed in each bottle.
