Vinification and aging

Winemaking at Domaine Charles Lachaux is a meticulous process, blending tradition and modernity. The hand-harvested grapes are carefully sorted to retain only the finest bunches. After partial destemming, the berries are placed in vats for controlled fermentation. This stage is followed by aging in oak barrels, some of which are new, allowing for aromatic complexity without masking the fruit. Aging, lasting 12 to 18 months, is carried out with particular care, promoting the integration of the oak and the harmony of flavors. Each cuvée is then bottled unfiltered, thus preserving the purity and authenticity of the wine.
