Vinification and aging

The winemaking of Échereaux Grand Cru 2024 is a meticulous process, respecting Burgundian traditions. After a manual harvest, the grapes are destemmed and gently crushed. Fermentation takes place in temperature-controlled tanks, preserving aromas and optimizing tannin extraction. Aging occurs in oak barrels, some of which are new, to refine the wine while respecting its character.
