His vision, his high standards, and his love of the land have allowed him to elevate the Domaine of Clos From the Fairies to the ranks of the greatest names in Roussillon. Today, it continues to perpetuate the tradition, producing authentic and expressive wines that reflect the richness and diversity of the terroir.

Vinification and aging

Winemaking at Domaine of Clos The Fées wine is crafted with meticulous care, aiming to preserve the integrity of the grapes and fully express the terroir's potential. The harvest is done by hand, with rigorous sorting of the berries. Fermentation takes place in stainless steel tanks using indigenous yeasts to encourage the expression of the wine's natural aromas. Aging occurs in French oak barrels for a period tailored to each cuvée, allowing the tannins to soften and the aromas to develop greater complexity.
