    Vinification and aging

    The winemaking process for Chambertin-Clos-de-Bèze is meticulous, respecting Burgundian traditions. The carefully selected grapes are destemmed before being fermented in wooden vats. This choice of materials allows for micro-oxygenation, promoting the expression of the terroir. The wine is then aged on its fine lees in oak barrels, some of which are new, to add complexity and structure.
