    Vinification and aging

    Winemaking at Domaine Georges Noëllat is crafted with a minimal intervention philosophy. The carefully sorted grapes are destemmed and fermented in wooden vats, promoting gentle tannin extraction. Fermentation takes place at a controlled temperature to preserve fruity and floral aromas. After fermentation, the wine is aged in oak barrels, some of which are new, for approximately 16 to 18 months.
