Tasting notes

This 2017 Cabernet Sauvignon displays a deep, intense ruby color. On the nose, it offers a complex bouquet of ripe black fruit, blackcurrant, spicy notes, and subtle hints of cedar. On the palate, it is full-bodied and powerful, with silky tannins and lovely acidity. The finish is long and persistent, revealing aromas of black fruit and spice. A red wine of great elegance and complexity.

The Kanonkop vineyard benefits from exceptional terroir, characterized by soils of decomposed granite and gravel, offering excellent drainage and good heat retention. climat Stellenbosch, with its hot summers and mild winters, is ideal for growing Cabernet Sauvignon. The vines are cultivated with care and respect for the environment to preserve the quality of the grapes. Sun exposure and sea breezes contribute to optimal ripening of the berries, promoting the concentration of aromas and the richness of tannins.

Owner and history

Kanonkop is a domaine Family winery for four generations, passed down from generation to generation and today managed by brothers Paul and Johann Krige. The name Kanonkop comes from a hill (kop) located on Mount Simonsberg, above the domaine, hence, in the 17th and 18th centuries, a stroke of canon announced the arrival of the sailboats in Table Bay. The rumble of canon signaled to local farmers, who were waiting to travel the 50 kilometers to the port, to load their carts with fresh fruits and vegetables to trade. The first wines bearing the Kanonkop label were produced in 1973.

Vinification and aging

The previous winter was the third consecutive dry winter, with less rain than the last and milder daytime and nighttime temperatures. A warm spring led to early budbreak. Regular showers marked flowering and fruit set, accompanied by a significant pest infestation. The harvest period was very dry, with limited water available for irrigation, but cooler nighttime temperatures in February.

Fermentation took place in open concrete vats at 29°C. The cap of skins was manually punched down every two hours during fermentation. The juice was racked after five days. Following malolactic fermentation, the wine was aged for 24 months in 225-liter Nevers oak barrels, composed of 50% new and 50% second-fill barrels.
