Vinification and aging

Alión's winemaking is carried out with meticulous attention to detail, respecting tradition while utilizing modern technologies. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, followed by extended maceration to extract aromas and tannins. Aging occurs in French oak barrels for an unspecified period, allowing the wine to refine and develop its complexity. The aim is to preserve the expression of the terroir and create an elegant and balanced red wine.
