Vinification and aging

Winemaking within Champagne Ayala The winemaking process is respectful and traditional. After a manual harvest, the grapes are gently pressed to extract the juice. Alcoholic fermentation takes place in temperature-controlled tanks, allowing for precise temperature control and preservation of aromas. The wine is then aged on its lees for a variable period, encouraging the development of its complexity. The final blend, which prioritizes balance between the grape varieties, is followed by a second fermentation in the bottle, allowing this champagne to develop its fine bubbles and delicate foam.
