Tasting notes

This Champagne Brut Nature La Source reveals a shimmering pale gold color. On the nose, aromas of white flowers and citrus mingle with mineral notes. On the palate, the attack is lively and fresh, with a lovely tension. The finish is long and persistent, marked by a pleasant minerality. A champagne of great elegance and beautiful complexity.

Philosophy: The domaine is certified organic (Ecocert). The work is done manually, the soils are plowed, and intervention in the cellar is minimal. The Terroir: We are here on the Kimmeridgian (calcareous marls), the same geological base as Chablis, which brings a very marked vinous and saline dimension.

Owner and history

THE domaine De Bichery is one of the rising stars of the "New York" Champagne". Based in Neuville-sur-Seine, in the Côte des Bar (Aube), this micro-domaine is directed by Raphaël Piconnet and his wife Hannah.

Vinification and aging

Raphaël and Hannah practice artisanal viticulture, very close to the land.

As its name suggests, this vintage seeks to trace the origin of the taste of the grape.

Blend: Approximately 60% Pinot Noir and 40% Chardonnay. The Pinot Noir provides structure and red fruit, while the Chardonnay adds finesse to the wine.

Winemaking: Fermentation and aging take place partly in oak barrels and partly in stainless steel tanks. Malolactic fermentation is generally carried out to add natural roundness.

Dosage: Brut Nature (0 g/L). No sugar is added at disgorgement, allowing the wine to express itself in its purest form.
