Vinification and aging

The winemaking process at La Landonne is meticulous, beginning with the hand-harvesting of the grapes. After delicate destemming, the berries ferment in temperature-controlled stainless steel tanks, allowing for a gentle extraction of tannins. Aging takes place in oak barrels, some of which are new, for 30 to 36 months. This crucial stage imparts the wine's aromatic complexity and structure, while respecting the identity of the terroir.
