    Haut Bailly II est le second vin proposé par la propriété. Créé en 1967, la cuvée porte initialement le nom de « Domaine de la Parde », mais c’est en 1979 que le nom est modifié. Haut Bailly II est alors issu de la culture des cabernets francs, cabernets sauvignons et merlots typiques de la région. Les 28 hectares de vignoble s’étendent sur des sables et graves en pente, sujets à un drainage de qualité. La vinification se déroule à la façon des grands vins et l’élevage dure 12 mois en moyenne. En ressort un breuvage élégant et fin.

    Owner and history

    Haut Bailly II is the estate's second wine. Created in 1967, the cuvée was initially named "Domaine de la Parde," but the name was changed in 1979. Haut Bailly II is made from Cabernet Franc, Cabernet Sauvignon, and Merlot grapes typical of the region. The 28 hectares of vineyards extend across sloping sandy and gravelly soils, benefiting from excellent drainage. Vinification is carried out in the manner of fine wines, and aging lasts an average of 12 months. The result is an elegant and refined wine.

    Vinification and aging

    - Hand-harvested and sorted in the vineyard
    - Winemaking in cement vats
    - Aged for 18 months in oak barrels, 50 to 65% of which are new.
