Vinification and aging

Winemaking at Torbreck is carried out with the utmost care, respecting tradition and employing a minimalist approach. The grapes are hand-harvested and rigorously sorted. Fermentation takes place in open wooden vats using indigenous yeasts. Aging then occurs in French oak barrels for a period that varies depending on the vintage and the wine's potential. The aim is to preserve the expression of the fruit and terroir while adding structure and complexity. The wines are neither filtered nor fined before bottling.
