Vinification and aging

The Giant Steps Applejack Vineyard Pinot Noir is crafted with meticulous attention to detail. The grapes are hand-harvested and carefully sorted. Fermentation takes place in open vats, with gentle maceration to extract aromas and delicate tannins. Aging occurs in French oak barrels, with a limited percentage of new oak to avoid masking the fruit's character. The wine is then bottled unfiltered, preserving its complexity and authenticity.
