Vinification and aging

The Henschke Mount Edelstone Shiraz 2016 is crafted with meticulous care. The grapes are hand-harvested and carefully selected. After partial destemming, they ferment in open vats, allowing for gentle tannin extraction. The wine is then aged for approximately 18 months in French oak barrels, some of which are new. This traditional method, combined with a modern approach, lends the wine complexity and elegance while preserving the authentic expression of the terroir.
