    We enjoy this wine with veal sautéed with chorizo, shakshuka, or a fine roasted poultry. Serve at around 15°C.

    Owner and history

    This cuvée comes from the plots of the former Château de Poncié. Pierre Cotton recently acquired these vines. The Gamay grapes are organically grown. Agroecology allows the estate to preserve biodiversity in the vineyard.

    Vinification and aging

    - Hand-harvested grapes
    - Winemaking using carbonic maceration, with whole bunches and indigenous yeasts
    - Aged in large oak casks and barrels (9 months)
    No fining, filtration or added sulfites.
