This 2021 Moulin-à-Vent displays a deep, brilliant ruby color. On the nose, it exudes aromas of ripe red fruits (cherry, raspberry), enhanced by floral and spicy notes. On the palate, the attack is ample and silky, with present but elegant tannins. The finish is long and persistent, leaving a pleasant sensation of freshness and complexity. Vinification and aging

Soil: Deep, very weathered granite for the Champ de cour, very deep soil of recent colluvium for the Petit Morier and slightly stony soil of the foothills and ancient alluvium for the Perrelles and the Petits bois; Infiltrated here and there by veins of manganese.
Harvest: Hand-picked. The grapes, carefully sorted, are transported in 25-kilo crates.
Winemaking: Cold carbonic maceration of whole bunches without SO2 with indigenous yeasts for 10 to 20 days depending on the vintage, manual decanting followed by pressing on a vertical wooden press.
Aging: On fine lees, without SO2, in 228-litre barrels for 8 to 12 months.
