Christophe Pacalet, head of the domaine, He embodies the new generation of Beaujolais winemakers. Drawing on his family heritage and his experience working alongside Marcel Lapierre, he is committed to producing authentic and environmentally conscious wines. His passion and expertise are reflected in every bottle, making his wines essential benchmarks of Beaujolais.

Vinification and aging

Harvest: Hand-picked. The carefully sorted grapes are transported in crates of 25
kilos.
Winemaking: Cold carbonic maceration of whole bunches without SO2 using indigenous yeasts for 10 to 20 days depending on the vintage.
Manual racking followed by pressing on a vertical wooden press.
Aging: On fine lees, without SO2, in 228-litre barrels for 6 to 9 months.
