Vinification and aging

The Armagh Shiraz is crafted with meticulous care, respecting tradition while embracing a modern approach. The grapes are hand-harvested at optimal ripeness, then sorted and destemmed. Fermentation takes place in temperature-controlled stainless steel tanks, followed by extended maceration to extract aromas and tannins. The wine is then aged in French oak barrels for an undisclosed period, allowing it to refine and develop its complexity.
