Vinification and aging

Winemaking at Maison Chandon is driven by a constant pursuit of excellence. After a meticulous hand-harvesting, the grapes are gently pressed to extract the juice. This juice ferments in stainless steel tanks, preserving the freshness of the aromas. The secondary fermentation process, meanwhile, follows the traditional method, resulting in fine and elegant bubbles. Aging on the lees adds further complexity to the aromas, offering a wine that is both fresh and structured.
